August 5, 2016

There’s nothing like a savory-sweet filling in a warm, flour taco to get your energy levels up and your cravings for delicious food fed. This chicken taco with sautéed onions and apples dish will absolutely make your day, without actually taking a whole day from you. It doesn’t take forever to make it, and it doesn’t require any particular cooking skill. Easy, quick, and delicious: what more could you ever ask for from a meal?

To make this dish, you’ll need:

  • 1 tablespoon of olive oil
  • 1 pound of skinless, boneless chicken breast, cut into bite-sized pieces
  • 1/2 teaspoon of salt
  • ½ teaspoon of ground nutmeg
  • ½ teaspoon of freshly ground black pepper
  • 1 tablespoon of butter
  • 2 cups of thinly sliced peeled Granny Smith apple
  • 2 garlic cloves, minced
  • 8 6-inch flour tortillas

Get a large nonstick skillet and heat the olive oil in it over medium-high heat. Sprinkle the chicken evenly with salt, nutmeg, and pepper. Add the meat to the pan, sauté it for 7 minutes (or until it has turned golden), and remove it from the pan (make sure to keep it warm).

Melt the butter in the pan over medium heat, and toss in the onion. Cook the onion for 4 minutes (or until the onion is tender), while stirring frequently.

Add the slices apple and cook the mixture for 6 more minutes (or until golden), while still stirring frequently.

Add the garlic, cook for 30 more seconds while stirring constantly, and return the chicken to the pan.

Cook the mixture for 2 minutes (or until everything has thoroughly heated). Don’t forget to stir. Heat the tortillas according to package directions, and arrange ½ cup of the chicken mixture evenly over each tortilla.
