This chicken taco with sautéed onions and apples dish will absolutely make your day, without actually taking a whole day from you. To make this dish, you’ll need:
- 1 tablespoon of olive oil
- 1 pound of skinless, boneless chicken breast, cut into bite-sized pieces
- 1/2 teaspoon of salt
- ½ teaspoon of ground nutmeg
- ½ teaspoon of freshly ground black pepper
- 1 tablespoon of butter
- 2 cups of thinly sliced peeled Granny Smith apple
- 2 garlic cloves, minced
- 8 6-inch flour tortillas
Get a large nonstick skillet and heat the olive oil in it over medium-high heat. Sprinkle the chicken evenly with salt, nutmeg, and pepper. Add the meat to the pan, sauté it for 7 minutes (or until it has turned golden), and remove it from the pan (make sure to keep it warm).
Add the slices apple and cook the mixture for 6 more minutes (or until golden), while still stirring frequently.
Add the garlic, cook for 30 more seconds while stirring constantly, and return the chicken to the pan.
Cook the mixture for 2 minutes (or until everything has thoroughly heated). Don’t forget to stir. Heat the tortillas according to package directions, and arrange ½ cup of the chicken mixture evenly over each tortilla.
